Gordon Bruce runs the place. He’s a Master of the Quaich, knows every inch, every quirk at Knockdhu. Nearly two decades here and he’s still classed as the new start.

He leads our small team through a craft that’s barely shifted in over a century. Then why should it?

Spring water from the hill is our lifeblood. So we put every drop to work – through condensers, washbacks, worm tubs. Then rinsing the whole lot, ready for the next batch.

Sustainable by nature

It’s just what we do. Our 2,000-square-metre wetlands now handle the spring water we don’t use for distilling – alive with 21,000 plants, pheasants, and whoever else turns up. This removes ten tankers from the road each week, and cuts 45 tonnes of carbon every year.

We also recover the heat we use, repair our casks, and keep packaging light.
